3 ½ cups all purpose flour
3 cups sugar
2 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
1 tablespoon nutmeg
4 eggs
4 bananas
1 cup vegetable oil
½ cup plus 2 tablespoons buttermilk
1 tablespoon vanilla extract
2 cups chopped walnuts
In a large mixing bowl, stir together flour, sugar, baking soda, salt, cinnamon, and nutmeg. In another mixing bowl, combine eggs, bananas, oil, buttermilk, and vanilla; add to flour mixture, stirring until just combined. Fold in nuts. Pour into two greased 9x5x3 baking pans. Bake at 325° for 1 hour and 20 minutes and then test bread. Bake longer, if needed. Cool on wire rack. Yield: 2 loaves.

ReplyDeleteI was just looking at the last few bananas the kids have decided they don't want to eat and thinking it's probably time for banana bread. Might have to try this one. :)
